What a special day…it’s my Dad’s birthday…but that’s not what makes it special (sorry Dad).

It’s national EGG MCMUFFIN DAY!

According to https://nationaltoday.com/, today is dedicated to the Egg McMuffin. As a breakfast sandwich fanatic & lover of themes I happily indulged.

After a little dive into history on the Google, here are the quick facts. The original Egg McMuffin is composed of an egg, cheese, and ham (canadian bacon) stacked between two halves of a buttery english muffin. McDonalds created this sandwich by accident. They were aiming for a fast-food version of eggs Benedict, but “missed.”

What’s important about the McDonald’s Egg McMuffin? The egg is circular with a broken yolk.The cheese is in the beginning stages of melty. The ham, grilled. The english muffin, buttered.

My duty on this particular March 2nd is to pay homage to this delightful breakfast sandwich, but whipped up in my kitchen!

I started by heating up two pans; egg pan on medium-low, ham pan to medium.

To achieve the round egg employ a round cookie cutter. I used a 3” cookie cutter to match the size of the english muffin. To ensure the egg doesn’t stick grease the cutter.

After the egg is dropped into the circle take a fork to break the yolk and swirl it around until it becomes slightly scrambled.

Turns out my pan is warped because the albumen seeped out quite a bit. Oh well! 

Put a lid over the pan, so the egg begins to cook through evenly. When the egg becomes firm, take the ring mold off. Place one slice of yellow American cheese on top and place the lid back on the pan. When you see the edges of the cheese slightly melt that’s how you know it’s perfect!

I’m putting a little spin on the traditional grilled ham. I used thinly sliced tavern deli ham. As you might remember, the english muffin is traditionally buttered. Well, we’re not using the butter on the muffin…we’re pan-frying the ham in butter! Fry until the ham shrinks up and becomes crispy, no flimsy ham! 

I promise, crispy fried ham dripping in butter does not disappoint. Talk about absolute fatty decadence.  

So since we’re skipping the butter on the english muffin, just pop it in the toaster!
